The Shannon Cookie

Once a month Outliers offers a variety of cookies that are available in our Weirdough Cookie Box, but “The Shannon Cookie” is available 24/7. This cookie was made based around a trip to Nobu in NYC my sister Shannon and I had. It was for her birthday, and we ordered the chef’s tasting menu.

When I think back to that day, all I can remember was laughing and drinking the sauce off the plates…and ordering lots of cocktails lol. This cookie reflects that experience in that it’s got a warmth from the toasted brown rice, that is reminiscent of the perfectly warm melt in your mouth sushi. It has brown sugar mochi speckled throughout that also adds a warmth, and to give that lick the plate clean notion, there are puffed rice toasted in milk powder, and a yuzu soy caramel.
